I sat down this evening to write a little throwback post on The Maldives and then this salad happened. It was too good not to share and I'm a must do now kinda gal, hence today's post being about the easiest salad I've ever made and not a trip to paradise.
Plant based salads are usually very boring, which I think is where the vegan/vegetarian food bad rep stems from. This Summer vegan dish is made with only six ingredients and it is absolutely mouth wateringly delicious.
- Pasta spirals (I use quinoa pasta spirals which are very yummy)
- Raw spinach
- Cherry tomatoes
- Raw Mushrooms
- Soy sauce
Cook the pasta, once cooked rinse with cold water. In a large bowl add the pasta, chopped spinach, chopped cherry tomatoes and chopped raw mushrooms. Drizzle honey and soy sauce over the top and mix.
Taaadaaaaaa , told you it was super easy ;)
