Apple & Fig Pizza with Cauliflower Crust - Dairy Free Pizza
This apple and fig pizza tastes amazing, I’m not going to lie I was pretty dubious about the toppings mix, but it actually works surprisingly well and is an absolute must try for Autumn. I created a cauliflower crust for this pizza which works really well.
This light, vegan friendly pizza is the perfect movie night feast and would work beautifully with salad or sweet potato fries as well as on it’s own. There is a step in the instructions to squeeze the cauliflower water out. This is the most important part of making this pizza as if not you'll end up with a soggy bottom!
I use either a nut bag or tea-towel to squeeze it out. I pop the cauliflower in the middle and bring all of the sides up and then just start squeezing the excess liquid out.
- 1/2 Cauliflower
- 1 Tbsp of sesame seeds
- 1 Tbsp of flax seeds
- 1 Cup of spelt flour
- 1/2 Red pepper
- 1/2 tTomato
- 4 Figs
- 1/2 Apple
- Tomato purée
- 1/2 Onion chopped
Pre-heat over to 220’c.
In a food processor place the chopped cauliflower, you may need to do this in two batches depending on the size of your processor and cauliflower.
Once blitzed into fine little pieces, almost resembling flour, you will need to squeeze the excess water out of the cauliflower. This is such an important step as the crust will be very strodgy and soft if you don’t. I usually use a tea towel but a nut bag will work even better. Place the cauliflower in the centre and pull the sides up to make a bag, twist the top so that it can’t escape and then squeeze as hard as you can. The excess liquid will come out through the fabric so make sure you have a bowl to squeeze this into!
Once you have squeezed all of the liquid out it’s time to add the flour and a little seasoning. I just add a pinch of salt and pepper. Now flatten onto a tray and brush a drop of olive oil over the top. Pop in the oven for about 20 mins or until golden brown.
Once the base is cooked it’s time to add the topping. Spread tomato purée over the base, add a generous amount of Kale and the chopped onion. I add about 4 big handfuls. Now chop strips of red pepper and place them on followed by sliced tomato, thinly sliced apple and sliced fig. Bake for 20-30 mins.
