Bee's Pollen Energy Balls

Energy balls are my all time favourite healthy sweet treat. If I could I would eat them every single day. The only reason I don't is because I have absolutely no self control when it comes to healthy sweet snacks and eat a batch of these chocolate balls within a day...if that. Energy Balls2

These vegan friendly snacks are so great for on the go as they are small and scrumptious, everyone who has tried them can't quite believe that these little wonderful balls are plant based, healthy and refined sugar free.

  • 1 cup of oats
  • 1/2 cup of sultanas
  • 1/2 cup of almonds
  • 2 tbsp of coconut oil
  • 3 tbsp of chia seeds
  • 3 tbsp pure cacao
  • 5 tbsp honey
  • Bee's pollen

Place all of the ingredients apart from the honey and pollen into the food processor and whizz up. Slowly add the honey as the mixer turns, once it sticks together in a big ball you have enough honey, you may possibly need more than this recipe. Create bite sized balls with your hands and roll the energy balls in the bee's pollen. Keep in the fridge. These can last up to 3 weeks (I honestly do not know how they could last more than a few days in someone's fridge. It mind boggles me.)
