Black Beans with Roasted Veggies
I just ate this for lunch and the moment this wonderful mix of beans and vegetables with a sweet tangy dressing hit my lips I KNEW that I had to share it on my blog. So no more than 20 mins later here I am writing about it. I'm cool like that...I'm also very forgetful and probably wouldn't remember to post this if I left if much longer...I then noticed the time and flew out of the house. This was written 5 days ago and I'm only just getting around to finishing it now. oops. This recipe would make two normal sized servings, I was in love with this dish so I ate it all.
Ingredients: 2 cups of cooked black beans. (I cook mine like rice, just in boiling water for about an hour) 1 cup of broccoli 4 carrots1 cup of cauliflower Olive oil Cinnamon
Dressing: 1 tablespoon of honey and the juice of half a lemon.
Pop the broccoli, carrots and cauliflower on a baking tray, drizzle with olive oil and sprinkle cinnamon on top. Bake at 200c for about 45 mins.
When the veg is nearly cooked place the beans in a large saucepan and warm them up, add the vegetables and mix together. Finally add the honey and lemon dressing and serve. Quick, simple and oh so very delicious.
