Chickpea & Sweetcorn Mash
This recipe came about completely and utterly by chance. Sorry Chickpea Mash, even though you are my new favourite food, you were a mistake. But oh my goodness what a wonderful mistake you were! This healthy alternative to a traditional mash is every kind of wonderful. I love the texture and taste and could seriously become addicted to it. Serve this in a plant based meal with roasted veggies and an olive oil dressing or if you're not vegan and fancying a little meat, why not pop to the shop and get some fancy sausages to accompany this unusual mash.
- 4 tbsp of flax seeds soaked in water just covering them for 20 mins
- 1 tin of chickpeas
- 1/2 a red pepper
- 1 75g tin of sweetcorn
- 4 tbsp of olive oil
- 4 tbsp of milk (I used riced milk)
- Salt and pepper for seasoning
Pre-heat over to 180 degrees Celsius.
In a food processor add all of the ingredients, whizz up until a mash consistency has formed.
Pop in a heat proof dish and bake in the oven for about 20 mins or until a little crispy on top.
