Birthday season is upon us in my family. It's my birthday, my mum's birthday, and most importantly, Arthur Cat and Albert Cat's birthdays within the next few days! There are plenty of birthday party celebrations to attend, which means plenty of party food.
Free from party food can be a tricky one, but have no fear, Peta is here with a FABULOUS free from treat - chocolate popcorn pops! Made using actual popcorn, these little chocolate bites on a stick go down wonderfully at any kind of gathering. They're perfect for those following a free from dairy diet as well as a gluten free and refined sugar free diet.
They don't take long to make at all and can be kept in the fridge for up to a week, although how you'll manage to resist their yumminess for a whole week is beyond me!
Chocolate Popcorn Pops
Feel good popcorn cake pops that are so easy to make.
Makes: 40 Pops
- 150g raw cashew nuts
- 100g sultanas
- 1 tbsp of coconut sugar
- 1 tbsp of coconut oil
- 1 tsp of ground ginger
- 1 bag of microwave popcorn
- 2 tbsp of pure cacao powder
- 4 tbsp of honey
- In a saucepan mix 150g of cashew nuts, 100g of sultanas, 1 tbsp of coconut sugar, 1 tbsp of coconut oil and 1 tsp of ground ginger on a very low heat.
- Pop the popcorn in the microwave for the recommended time.
- Once the popcorn has popped remove from the microwave and pour into a large bowl.
- In a food processor place the cashew nut mixture along with the popcorn. Be sure to carefully pick the popcorn out and not to add any unpopped kernels!!
- Add 2 tbsp of pure cacao powder and mix very thoroughly in the food processor.
- Once thoroughly mixed add 4 tbsp of honey.
- When a very large doughy consistency has formed, roll by hand into little balls and place on cocktail sticks. Store in the fridge.
