Sweet snacks are my weakness and if they're healthy sweet snacks then you can just say goodbye to the batch before they even make it into the cookie jar. (I don't own a cookie jar for this reason, it would ALWAYS be empty.)
These plant based chocolate cookies are really yummy, not too sweet and they make a great on the go vegan snack whilst you're traveling. I tend to batch bake simple snacks for the week on a Sunday night and keep them in airtight containers so that I can just grab a handful as I run out of the door, in my usual rush, on a weekday morning.
- 1 Cup of cooked black beans
- 1 Cup of spelt flour (most flours will do!)
- 1 Cup of almonds
- 1 Apple
- 4 tbsps of pure cacao
- 2 tbsps of honey
- 1 tbsp of cinnamon
Pre-heat over to 180c.
Pop the black beans, flour and almond in a food processor, turn on and once mixed together add in the apple (cut up), pure cacao, honey and cinnamon. This should form a nice dough. Break chunks off and roll into balls, flatten with your hands and place on a baking tray. Bake for 15 mins.
