On Saturday morning I thought I'd have a go at making "healthy" doughnuts, as you can see they didn't quite turn out to be doughnuts but I'll definitely be making them again. I've called them rounds...for obvious reasons. They're a cross between a biscuit and a cake and go down very well with a cup of tea. DSC04071

Ingredients:

  • 1 Cup of spelt flour
  • 3 Cups of oats
  • 2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1 tsp of bicarb.
  • 5 Tbsp of honey
  • 2 ts of almond butter
  • 4 tbsp of chia seeds
  • 1 cup of rice milk

Glaze: - 1 tbsp of coconut oil - 1 tbsp of honey

Preheat oven to 200 degrees Celsius.

In a food processor ground the oats into a flour and add the spelt flour, little by little add the rest of the ingredients until a sticky dough has formed. With the piping bag squeeze the dough to create circles on grease proof paper on a baking tray. Bake for 20 minutes. Place on a cooling rack.

To glaze heat the coconut oil and honey and simply brush over the baked rounds.

Pop the kettle on and enjoy!
