Lemon Nibbles | Pe-ta Food

These lemon nibbles taste so good and last much longer than energy balls for me as they're smaller! I'm not as tempted to eat quite the same quantity of mixture as I would be if they were larger in size. They are very easy to make and will keep in the fridge for up to 7 days or in the freezer for a realllly long time. They're sweet with a nice zesty lemon tang and make a great on the go snack.

Lemon Nibbles Ingredients:

  • 1 cup of oats
  • 1 cup of sultanas
  • 3 tbsp olive oil
  • 2 tbsp chia seeds
  • Zest & juice of 2 lemons


Pop all of the ingredients into a blender and mix thoroughly, this will take about 3-5 minutes until a big mass of doughy goodness has formed. Roll into small balls - if you dampen your hands with water it will make it much easier to roll them, and store in the fridge.
