Lentil and Carrot Spaghetti | Pe-ta Food
Oooooooh Lentil Spaghetti, I am in love. This delicious, quick recipe makes a great weekday dinner. It's very filling, and a proper comfort food dish. This plantbased meal uses gluten free spaghetti so you don't get that bloated feeling after filling your boots!
Lentil Spaghetti Ingredients: (Makes 4 Dishes)
- 1 Onion - chopped
- 3 Cloves of garlic - crushed
- 1 tbsp of olive oil
- 4 Carrots - chopped
- 1 tin of lentils - rinsed and drained
- 1 tin of chopped tomatoes
- 1 tbsp of mixed provence herbs or any green herbs you fancy
- Salt & Pepper to season
- Gluten free spaghetti
In a large saucepan fry the onion and garlic slowly in olive oil. Once golden brown add the carrots, lentils and chopped tomatoes. Bring to the boil and then turn down to simmer, add the herbs and salt and pepper. Leave to cook for 30 - 40 minutes, or until the carrots are nice and soft. In a seperate saucepan cook gluten freen spaghetti. Once the spaghetti is cooked, drain and rinse and then add to the carrot and lentil mixture. Mix thoroughly and enjoy!
