This sweet potato mash is bloomin' marvellous! I don't mean to blow my own trumpet or anything but it's just so bloody yummy! I've been cooking up puree, soup and smoothie storms in the kitchen this week due to the removal of my wisdom teeth. This mash has cumin and turmeric which are both anti inflammatory as well as onion and garlic which are natural antibiotics, it's the perfect food for recovery and a wonderful winter warmer. Serves 4
Ingredients: 2 Sweet potatoes3 Large carrots 1 Onion 1 Clove of garlic Drop of olive oil 1 Tablespoon of coconut oil 1 Tablespoon of cumin 1 Tablespoon of turmeric Salt and Pepper
Pre-heat oven to 220c, peel the sweet potatoes and chop into small cubes. Chop the carrots, without peeling into cubes and the onion. Place on a baking tray, peel the garlic and place on the same baking tray whole. Drizzle olive oil over the top and add a sprinkle of salt and pepper. Pop in the oven and cook until soft, this takes about 40 mins.
Once cooked pop all of the vegetables in a food processor with the coconut oil, cumin and turmeric and whiz up! You may want to add a little milk, I used rice milk which was wonderful however you could use any plant based milk (or cow milk) of your choice.
Now, it's time for the most important bit. Sit your bum down and enjoy this yummy, warming marvelous mash.
