Hello and Happy Monday to you lovely person on the other side of the screen! This weekend I got my best plant based cooking skills out and created some of my best dishes yet so I thought instead of popping them all in one fabulous blog post why not share the love for these vegan meals over the week so that they're a little easier for readers to find in the future. Always thinking Peta, always thinking.
This nutty quinoa bowl is a great healthy lunch when you're on the go during a busy work week. It's a one pot meal, the kind of easy simple dish that always gets my seal of approval for a hectic week!
Nutty Quinoa Bowl Ingredients:
- 1.5 Cups of quinoa
- 2 Heads of broccoli
- 1 Sweet potato
- 2 Handfuls of walnuts
- 1 Tbsp of coconut oil
- Salt & Pepper to season
Pre-heat oven to 120'c.
In a saucepan of boiling water add the quinoa and cook for 20 mins. Once cooked rinse and drain.
Chop the broccoli and sweet potato, I like to use the stem of the broccoli too as it has lots of flavour and is jam packed with nutrients, minerals and vitamins. Drizzle olive oil over the top and season with salt and pepper. Place in the oven for about 20 mins.
Once the vegetables are cooked add them with the quinoa into a bowl along with the crushed walnuts and coconut oil. Mix thoroughly.
I love to serve mine on a bed of fresh greens with a topping of delicious dried cranberries.
