Onion Falafels | Simple Falafel Recipe

It's no secret that I have a slight obsession with falafels right now, I can't explain why I'm so drawn to these delicious, baked vegan alternatives to meat, but I really can't get enough of them. These onion falafels are simple to make and are lovely with salad.
I've teamed mine with a roasted and cauliflower mash which is so yummy and the perfect accompaniment.
Onion Falafels Ingredients:
- 2 tins of chickpeas (rinsed)
- 1 tsp of turmeric
- 1 tsp of cumin
- 1 raw onion (peeled and chopped)
- 4 tbsp of olive oil
- Salt & pepper for seasoning
Method:
Pre-heat oven to 220'c, pop the ingredients into a blender and mix.
Roll a large table spoon of the mixture in a ball in the palm of your hands and flatten on a greased baking tray. Repeat until you have used all of the mixture and bake for 20-30 mins.
