These yummy plant based Calzones or Pocket Pizzas as I like to call them are a great on the go lunch for work. Made with delicious sauteed vegetables, this vegan dish is simple and easy to make.
- 2 cups of flour (I used spelt flour)
- 1/2 cup of water
- 4 Tbsp of olive oil
- 1 Head of broccoli
- 6 Cherry tomatoes
- 1 Red pepper
- 2 Handfuls of spinach
- 1 Tin of tomatoes (blitz these in the blender)
- Salt & Pepper to season
In a large bowl mix the flour, water, olive oil and a pinch of salt into a dough. Kneed the dough for a few minutes and set aside.
Preheat oven to 180'c.
In a frying pan heat a drop of olive oil and add all of the chopped vegetables apart from the spinach. Cook for 15 minutes, add the spinach and the tomatoes and bring the heat right down.
Separate the dough into four parts, roll into circles. Add a few spoonful of the mixture onto one side of the circle leaving space around the edges. With a little water, run your fingertip around the edge and fold the other half of the circle over, the water will help to stick the edges together. Repeat this four times.
Place the pocket pizzas on grease proof paper on a tray brush a little olive oil over the top and cook for 20 mins or until slightly golden brown.
Serve with a salad or sweet potato fries!
