There is something so pleasing and easy about overnight oats, having a yummy pot of pre-prepared (is this a word?! spellcheck says no.) healthy goodness waiting for you in the fridge just makes early morning breakfast time go that little bit smoother. I usually take overnight oats to the gym with me to snack on as I walk to work if I have morning classes. They're very simple and easy to make and taste delicious, especially post workout!
This summertime combination makes my heart happy, it's so scrumptious you'd never guess it was a super healthy plant based breakfast.
- 1 Cup of oats
- Half a cup of rice milk
- 1 tbsp of honey
- 1 handful of strawberries
- 1 handful of blueberries
In a bowl mix the oats, milk and honey. Chop the strawberries seperately. In a glass or jar place a thick layer of the oats mixture. Top with strawberries, now pop another layer of oats on top, sprinkle over the blueberries followed by another layer of oats and top with the remaining strawberries and blueberries. Place in the fridge overnight and enjoy the morning after!
