Tomato & Coconut Soup | Plant Based Meals
Good morning my lovely wonderful readers! Happy Monday! It's going to be a good'en I promise. Yesterday I came up with a super easy tomato and coconut soup recipe that was scrumptious, and yummy and warming and just ohhhh. You know that perfect bowl of Autumn cosiness? I think this may well be it!
Tomato & Coconut Soup Ingredients:
- 12 Tomatoes
- Drop of olive oil
- 1 Cup of coconut milk
- Salt & Pepper to season
For the topping:
- 2 Handfuls of kale
- 3 Cloves of garlic
Pre-heat oven to 200'c.
Pop the tomatoes on a tray and drizzle olive oil over the top. Place in the oven for about 30 mins.
Once cooked pop in a blender with the coconut milk, salt and pepper. Blend and heat in a saucepan once blended.
For the topping, on a tray place the kale, chopped garlic cloves and salt and pepper. Put in the oven for 10 minutes.
