These Pimientos De Padrón are a brilliant, very quick and easy Spanish side dish. They're great for BBQs or as a side on pizza night. I usually team them with tapas dishes such as Spanish Omelette or Turmeric Courgette and of course tomato bread.
They're pretty easy to find in most supermarkets, if you like a surprise kick and are into spicy foods, feel free to add a few cheeky chillis to the mix in amongst the little Spanish peppers.
Prep and cook time is minimal - this side dish takes about 15 minutes to make from start to finish. A sprinkle of sea salt is a must, and I tend to use extra virgin olive oil to cook the mini peppers in. Any sized frying pan will do and in three very easy steps you'll be enjoying these delicious Spanish style peppers.
