Weekly Meal Prep | 2nd October 2016


There's nothing quite like the shortening of days and the crisp leaves under foot to get you in the mood for Autumnal dinners is there? I've prepared a few hearty dishes for the coming week with plenty of festive flavours to welcome this gorgeous month and all the wonderful things it has to bring. I'm changing the weekly meal prep up a little though this week, I've decided to post the recipes throughout the week with seperate videos for each dish which should make it easier for those searching for a particular recipe. I thought I'd still give you a little sneak peak of what to expect, as the recipes go up I'll pop a little link below each one so that you can find it easily.

Vegan Sheperds Pie


No words can quite explain just how delicious this is. I am beyond excited about it, I took a plate up to my parent's for them to give it a go and my Sister exclaimed "oh my god, you'd never guess this was vegan". It's a warming combination of the loveliest autumn flavours and the perfect comfort meal on a cosy night in. I can't wait for you to try it!

Autumn Slow Cooker Stew


Potatoes, chickpeas, pepper, onion, and a few other little nutritional yummies thrown in, mixed with scrumptious spices to create a delicious stew which can cook whilst you're at work. There's nothing quite like arriving home to a slow cooker full of dinner.

Rice & Bean Salad

A great on the go lunch box meal, I enjoy eating this one cold. The nutty taste of tahini teamed with the red beans and brown rice is not only very filling but really quite moreish too!

Let's Go Nuts Quinoa Bowl

I will definitely be listingΒ this one as of my all time favourites, quinoa with roasted sweet potato, nuts, cranberries all on a bed of greens you say?! What's not to like?! It really is every kind of wonderful.

Butternut Squash Soup

You can't have an October meal prep without some kind of autumn soup now can you? This roasted butternut squash soup does not disappoint. It is gloriously thick and creamy. A warming lunchtime treat!
