Hello my lovely Wonderful Wednesday Friends! Can you believe it's the last WW of June?! I know I say it every week but where on earth has the time gone? As you may have noticed if you're a regular reader around these parts, I've been getting my bum in gear and cathing up on all of the recipes I had in my drafts. Plenty of drooling has been going on as I've dreamed of foods past. I'm so grateful that I have had a little extra time over the past week to update the blog with yumminess, there's nothing quite like a spot of plant based foodie writing to get my motivation going!
The Coconut Curry Lentil Dahl was actually a Sunday night make and my goodness did it fill the hole perfectly.
I also popped up the dairy free and refined sugar free Birthday cake that I made for my mum two weeks ago. Orange & Pineapple, oh that combination! Also the topping can be made as a vegan sorbet, which I may or may not have enjoyed as a midnight snack during those long, stressful end of term days!
The wonderful Polly of Polly's Mixtures very kindly asked me to guest post on her blog around the topic of a vegan diet. I shared my story of why I follow a predomanantly plant based diet. Thank you Polly!! I was ever so flattered!!
In other news I spent the whole weekend just pottering around, relaxing, meeting up with friends and reading. I haven't had a proper weekend off with no work at all since last June so I really did savour it.
I have been reading some amazing books lately, one of the books I highly reccomend is Big Magic by Elizabeth Gilbert, particularly if you're a creative soul. It really has changed my whole outlook on ideas, creativity and doing what I love. I finished the book in just one weekend!
I'm off to Cornwall for a couple of days today, so as you're reading this I am most likely either in the air on my way to the UK, or on a coach on my way down south! I'm so looking forward to seeing Fraser, my family and of course my friends. Eeeep!! There's nothing like a stressful try and fit seeing everyone in to two days start to July hehe! I'm sure the copious amounts of tea will calm me down.
I think that's all I have to tell you really. Oh! I nearly left without giving you a cat update! Albert cat is really being hit by the heat at the moment. He's now eating very well again but I've put off his operation to be castrated until I feel he's 100% healthy. I'd hate for him to get poorly because of it.
Arthur Cat is being his usual naughty self, and spends his time stalking lizards in the garden. Unfortunately he's getting quicker and I've had to take a few off him this week! Katie Cat has decided that she is 100% the boss and is walking around like she own the place. She's also eating an insane amount of food for her at the moment, so is really fattening up, YAY! Tina Cat, bless her little cotton socks, is in her own little world as per usual. She's happy with a bedtime cuddle and to meow at my feet all day long. What would I do without my furbabies?!
